A hearty and comforting stew perfect for holiday gatherings, featuring turkey and pumpkin.
Ingredients

- 2 tablespoons olive oil
- 1 pound boneless, skinless turkey thighs, cut into 1-inch pieces
- 1 large onion, chopped
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 cups chicken broth
- 1 (15 ounce) can pumpkin puree
- 1 cup chopped kale
- 1/2 cup heavy cream
Instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Add turkey pieces and cook until browned on all sides. Remove turkey from pot and set aside.
- Add onion, carrots, and celery to the pot. Cook until softened, about 5-7 minutes. Add garlic, thyme, and rosemary and cook for 1 minute more until fragrant.
- Return turkey to the pot. Stir in salt and pepper. Pour in chicken broth and bring to a simmer.
- Reduce heat to low, cover, and simmer for 20 minutes, or until turkey is cooked through.
- Stir in pumpkin puree and kale. Cook for another 5 minutes, or until kale is wilted.
- Stir in heavy cream and heat through, but do not boil.
- Serve hot.
Notes
- For a thicker stew, you can mash some of the pumpkin against the side of the pot.
- Garnish with fresh parsley if desired.
