Ingredients

- 1 pound ground turkey
- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 carrots, peeled and sliced
- 2 celery stalks, sliced
- 4 cups chicken broth
- 1 teaspoon turmeric
- 1/2 teaspoon ginger powder
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add ground turkey and cook until browned, breaking it up with a spoon.
- Add onion, carrots, and celery to the pot. Cook until softened, about 5-7 minutes.
- Stir in chicken broth, turmeric, and ginger powder.
- Bring the stew to a simmer, then reduce heat and cook for 20 minutes, or until vegetables are tender.
- Season with salt and pepper to taste.
