Ingredients

  • 1 pound ground turkey
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 4 cups chicken broth
  • 1 teaspoon turmeric
  • 1/2 teaspoon ginger powder
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add ground turkey and cook until browned, breaking it up with a spoon.
  3. Add onion, carrots, and celery to the pot. Cook until softened, about 5-7 minutes.
  4. Stir in chicken broth, turmeric, and ginger powder.
  5. Bring the stew to a simmer, then reduce heat and cook for 20 minutes, or until vegetables are tender.
  6. Season with salt and pepper to taste.
