Ingredients

- 1 pound ground turkey
- 1/2 cup pearl barley, rinsed
- 3 cups low-sodium chicken broth
- 1 cup water
- 1 medium carrot, finely diced
- 1 celery stalk, finely diced
- 1/2 teaspoon dried thyme
- Salt and black pepper to taste
Instructions
- In a large pot or Dutch oven, cook the ground turkey over medium heat until browned. Drain any excess fat.
- Add the rinsed barley, chicken broth, water, diced carrot, diced celery, and dried thyme to the pot.
- Bring the mixture to a boil, then reduce heat, cover, and simmer for 45-50 minutes, or until the barley is tender and has absorbed most of the liquid.
- Season with salt and black pepper to your preference.
- Serve warm.
Notes
- You can substitute ground chicken for turkey if preferred.
- For a smoother texture, you can blend a portion of the cooked meal before serving.
- Ensure all vegetables are finely diced for easier digestion.
