- 1 pound ground turkey
- 1 cup wild rice, cooked
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 cup chopped onion
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add ground turkey and cook until browned, breaking it up with a spoon. Drain excess fat.
- Add chopped carrots, celery, and onion to the pot. Cook until softened, about 5-7 minutes.
- Stir in minced garlic and cook for 1 minute more until fragrant.
- Pour in chicken broth and add cooked wild rice, thyme, and rosemary.
- Bring the mixture to a boil, then reduce heat and simmer for 15-20 minutes, or until vegetables are tender and flavors have melded.
- Season with salt and pepper to taste.
- Serve hot.
