Ingredients

  • 1 cup wild rice, cooked
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add ground turkey and cook until browned, breaking it up with a spoon. Drain excess fat.
  3. Add chopped carrots, celery, and onion to the pot. Cook until softened, about 5-7 minutes.
  4. Stir in minced garlic and cook for 1 minute more until fragrant.
  5. Pour in chicken broth and add cooked wild rice, thyme, and rosemary.
  6. Bring the mixture to a boil, then reduce heat and simmer for 15-20 minutes, or until vegetables are tender and flavors have melded.
  7. Season with salt and pepper to taste.
