Ingredients

- 1 lb ground lamb
- 1 medium zucchini, diced
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1/2 cup cooked quinoa
- 1/4 cup chopped fresh parsley
- 1 tablespoon olive oil
- Salt to taste
- Black pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add ground lamb and cook, breaking it up with a spoon, until browned. Drain excess fat.
- Add chopped onion and cook until softened, about 5 minutes.
- Stir in minced garlic and cook for 1 minute more until fragrant.
- Add diced zucchini and cook until tender-crisp, about 5-7 minutes.
- Stir in cooked quinoa, chopped parsley, salt, and pepper.
- Cook for another 2-3 minutes, stirring to combine all ingredients.
- Serve hot.
Notes
- For extra protein, you can add a fried egg on top.
- Adjust seasoning to your preference.
