Ingredients

  • 1 pound boneless, skinless chicken breast, cut into bite-sized pieces
  • 4 cups shredded cabbage
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 1/4 cup low-sodium chicken broth
  • 1 tablespoon soy sauce (low sodium)
  • 1 teaspoon grated fresh ginger
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large skillet or wok over medium-high heat.
  2. Add chicken pieces and cook until browned on all sides and cooked through. Remove chicken from skillet and set aside.
  3. Add minced garlic to the skillet and cook for 30 seconds until fragrant.
  4. Add shredded cabbage to the skillet and stir-fry for 3-5 minutes until slightly tender.
  5. Pour in chicken broth and soy sauce. Add grated ginger.
  6. Return the cooked chicken to the skillet.
  7. Stir everything together and cook for another 2-3 minutes until the cabbage is tender-crisp and the sauce has slightly thickened.
  8. Season with salt and black pepper to taste.
  9. Serve hot.

Notes

  • For a spicier dish, add a pinch of red pepper flakes with the garlic.
  • You can substitute broccoli florets or bell peppers for some of the cabbage.
