Ingredients

- 1 pound boneless, skinless chicken breast, cut into bite-sized pieces
- 4 cups shredded cabbage
- 1 tablespoon olive oil
- 1 clove garlic, minced
- 1/4 cup low-sodium chicken broth
- 1 tablespoon soy sauce (low sodium)
- 1 teaspoon grated fresh ginger
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large skillet or wok over medium-high heat.
- Add chicken pieces and cook until browned on all sides and cooked through. Remove chicken from skillet and set aside.
- Add minced garlic to the skillet and cook for 30 seconds until fragrant.
- Add shredded cabbage to the skillet and stir-fry for 3-5 minutes until slightly tender.
- Pour in chicken broth and soy sauce. Add grated ginger.
- Return the cooked chicken to the skillet.
- Stir everything together and cook for another 2-3 minutes until the cabbage is tender-crisp and the sauce has slightly thickened.
- Season with salt and black pepper to taste.
- Serve hot.
Notes
- For a spicier dish, add a pinch of red pepper flakes with the garlic.
- You can substitute broccoli florets or bell peppers for some of the cabbage.
