- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
- 1 lb Yukon Gold potatoes, peeled and cut into 1-inch cubes
- 1 large onion, chopped
- 2 carrots, peeled and sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and black pepper to taste
- 2 tablespoons olive oil
- 2 tablespoons all-purpose flour
- 1/2 cup milk
Instructions
- Preheat your oven to 375°F (190°C).
- In a large oven-safe pot or Dutch oven, heat olive oil over medium-high heat.
- Add chicken pieces and cook until browned on all sides. Remove chicken and set aside.
- Add onion, carrots, and celery to the pot. Cook until softened, about 5-7 minutes.
- Stir in minced garlic and cook for 1 minute more until fragrant.
- Sprinkle flour over the vegetables and stir to coat. Cook for 1 minute.
- Gradually whisk in chicken broth until smooth.
- Add thyme, rosemary, salt, and pepper. Bring to a simmer.
- Return the browned chicken to the pot. Add the cubed potatoes.
- Cover the pot and transfer it to the preheated oven.
- Bake for 45-55 minutes, or until potatoes are tender and chicken is cooked through.
- In a small bowl, whisk together milk and 1 tablespoon of flour to create a slurry.
- Stir the milk slurry into the pot during the last 10 minutes of baking to thicken the sauce.
- Serve hot.
Notes
- For a richer flavor, you can use chicken thighs with bone-in and skin-on, adjusting cooking time as needed.
- Feel free to add other vegetables like peas or green beans in the last 15 minutes of baking.
- If you don’t have an oven-safe pot, you can transfer the mixture to a baking dish before putting it in the oven.
