Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 lb Yukon Gold potatoes, peeled and cut into 1-inch cubes
  • 1 large onion, chopped
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • 2 tablespoons all-purpose flour
  • 1/2 cup milk

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large oven-safe pot or Dutch oven, heat olive oil over medium-high heat.
  3. Add chicken pieces and cook until browned on all sides. Remove chicken and set aside.
  4. Add onion, carrots, and celery to the pot. Cook until softened, about 5-7 minutes.
  5. Stir in minced garlic and cook for 1 minute more until fragrant.
  6. Sprinkle flour over the vegetables and stir to coat. Cook for 1 minute.
  7. Gradually whisk in chicken broth until smooth.
  8. Add thyme, rosemary, salt, and pepper. Bring to a simmer.
  9. Return the browned chicken to the pot. Add the cubed potatoes.
  10. Cover the pot and transfer it to the preheated oven.
  11. Bake for 45-55 minutes, or until potatoes are tender and chicken is cooked through.
  12. In a small bowl, whisk together milk and 1 tablespoon of flour to create a slurry.
  13. Stir the milk slurry into the pot during the last 10 minutes of baking to thicken the sauce.
  14. Serve hot.

Notes

  • For a richer flavor, you can use chicken thighs with bone-in and skin-on, adjusting cooking time as needed.
  • Feel free to add other vegetables like peas or green beans in the last 15 minutes of baking.
  • If you don’t have an oven-safe pot, you can transfer the mixture to a baking dish before putting it in the oven.
