Ingredients

  • 1.5 lbs beef chuck, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups beef broth
  • 2 large sweet potatoes, peeled and cut into 1-inch cubes
  • 1 tablespoon cornstarch (optional, for thickening)
  • 2 tablespoons cold water (optional, for thickening)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Season the beef cubes with salt and pepper.
  3. Heat olive oil in a large oven-safe pot or Dutch oven over medium-high heat. Brown the beef on all sides. Remove beef and set aside.
  4. Add the chopped onion to the pot and cook until softened, about 5 minutes. Add the minced garlic, thyme, and rosemary, and cook for 1 minute more until fragrant.
  5. Return the beef to the pot. Pour in the beef broth, scraping up any browned bits from the bottom of the pot.
  6. Bring the liquid to a simmer, then cover the pot and transfer it to the preheated oven.
  7. Bake for 1.5 hours.
  8. Add the sweet potato cubes to the pot. Stir to combine.
  9. Continue baking, covered, for another 45-60 minutes, or until the beef and sweet potatoes are tender.
  10. If you prefer a thicker sauce, mix the cornstarch and cold water in a small bowl to create a slurry. Stir the slurry into the pot during the last 10 minutes of cooking.
  11. Serve hot.

  • For a richer flavor, you can sear the beef in batches to ensure a good crust.
