- 1.5 lbs beef chuck, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 cups beef broth
- 2 large sweet potatoes, peeled and cut into 1-inch cubes
- 1 tablespoon cornstarch (optional, for thickening)
- 2 tablespoons cold water (optional, for thickening)
Instructions
- Preheat your oven to 325°F (160°C).
- Season the beef cubes with salt and pepper.
- Heat olive oil in a large oven-safe pot or Dutch oven over medium-high heat. Brown the beef on all sides. Remove beef and set aside.
- Add the chopped onion to the pot and cook until softened, about 5 minutes. Add the minced garlic, thyme, and rosemary, and cook for 1 minute more until fragrant.
- Return the beef to the pot. Pour in the beef broth, scraping up any browned bits from the bottom of the pot.
- Bring the liquid to a simmer, then cover the pot and transfer it to the preheated oven.
- Bake for 1.5 hours.
- Add the sweet potato cubes to the pot. Stir to combine.
- Continue baking, covered, for another 45-60 minutes, or until the beef and sweet potatoes are tender.
- If you prefer a thicker sauce, mix the cornstarch and cold water in a small bowl to create a slurry. Stir the slurry into the pot during the last 10 minutes of cooking.
- Serve hot.
Notes
- For a richer flavor, you can sear the beef in batches to ensure a good crust.
