Description

Ingredients

  • 2 pounds beef chuck roast, thinly sliced
  • 1 cup pumpkin puree
  • 1/4 cup soy sauce
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper

Instructions

  1. Combine pumpkin puree, soy sauce, Worcestershire sauce, brown sugar, garlic powder, onion powder, and black pepper in a bowl.
  2. Add beef slices to the marinade and toss to coat evenly.
  3. Cover the bowl and refrigerate for at least 4 hours, or preferably overnight.
  4. Preheat your oven to 170°F (77°C) or prepare your dehydrator.
  5. Arrange beef slices in a single layer on baking sheets lined with parchment paper or on dehydrator trays.
  6. Bake or dehydrate until the jerky is dry and leathery, about 4-8 hours, depending on your method and desired texture.
  7. Let the jerky cool completely before storing in an airtight container.

Notes

  • For a spicier jerky, add a pinch of cayenne pepper to the marinade.
  • Ensure beef is sliced against the grain for a more tender jerky.
