Ingredients

- 1 pound ground beef
- 1 can (15 ounces) chickpeas, rinsed and drained
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 can (14.5 ounces) diced tomatoes, undrained
- 1 cup beef broth
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- Salt and black pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add ground beef and cook until browned, breaking it up with a spoon. Drain off any excess fat.
- Add chopped onion to the skillet and cook until softened, about 5 minutes.
- Stir in minced garlic and cook for 1 minute more until fragrant.
- Add the rinsed and drained chickpeas, diced tomatoes (with their juice), and beef broth to the skillet.
- Stir in cumin and paprika. Season with salt and black pepper.
- Bring the mixture to a simmer, then reduce heat to low, cover, and cook for 20 minutes, stirring occasionally.
- Serve hot.
Notes
- For extra fiber, you can add a cup of spinach during the last 5 minutes of cooking.
- This meal can be made ahead and reheated.
