Ingredients

  • 1 pound ground beef
  • 1 can (15 ounces) chickpeas, rinsed and drained
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 cup beef broth
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add ground beef and cook until browned, breaking it up with a spoon. Drain off any excess fat.
  3. Add chopped onion to the skillet and cook until softened, about 5 minutes.
  4. Stir in minced garlic and cook for 1 minute more until fragrant.
  5. Add the rinsed and drained chickpeas, diced tomatoes (with their juice), and beef broth to the skillet.
  6. Stir in cumin and paprika. Season with salt and black pepper.
  7. Bring the mixture to a simmer, then reduce heat to low, cover, and cook for 20 minutes, stirring occasionally.
  8. Serve hot.

Notes

  • For extra fiber, you can add a cup of spinach during the last 5 minutes of cooking.
