Ingredients

- 1 pound ground beef
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 carrots, peeled and diced
- 1 cup beef broth
- 1 teaspoon dried thyme
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add ground beef and cook, breaking it up with a spoon, until browned. Drain excess fat.
- Add chopped onion and diced carrots to the skillet. Cook until the onion is softened, about 5 minutes.
- Pour in beef broth and add dried thyme. Bring to a simmer.
- Reduce heat to low, cover, and cook for 15-20 minutes, or until carrots are tender.
- Season with salt and black pepper to taste.
