Ingredients

- 1 pound ground beef
- 1 cup brown lentils, rinsed
- 4 cups beef broth
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon black pepper
- 1/4 teaspoon salt
- 2 tablespoons olive oil
- Fresh parsley, chopped, for garnish
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add ground beef and cook until browned, breaking it up with a spoon. Drain excess fat.
- Add chopped onion, carrots, and celery to the pot. Cook until softened, about 5-7 minutes.
- Stir in minced garlic and cook for 1 minute more until fragrant.
- Add rinsed lentils, beef broth, dried thyme, black pepper, and salt. Bring to a boil.
- Reduce heat to low, cover, and simmer for 30-40 minutes, or until lentils are tender.
- Stir occasionally. If the mixture becomes too thick, add a little more broth or water.
- Serve hot, garnished with fresh parsley.
Notes
- For a vegetarian option, substitute the ground beef with extra lentils or a plant-based protein.
- You can add other vegetables like spinach or kale in the last 10 minutes of cooking.
